Stuff I throw in:
- chicken thighs, like 1.5–2 lbs because breasts always come out dry for me
- 1 cup rice (sometimes I forget to rinse it, oops)
- chicken broth, enough to cover
- frozen broccoli, the whole bag because veggies
- garlic powder, salt, pepper, maybe some Italian seasoning if I can find it
8 minutes high pressure, let it sit 10 mins then quick release. Stir. If it’s too soupy I just leave the lid off for a minute on saute.

One time I added way too much broth and it was basically soup with rice floating in it. Called it “chicken rice bisque” and the kids actually liked it better. Kids are weird.

Winter nights this is on heavy rotation. Chuck roast was like $6/lb on sale last week so I stocked up.
Rough recipe:
- beef chunks
- potatoes and carrots chopped big (no need to be fancy)
- onion, couple garlic cloves smashed
- beef broth, splash of soy sauce or Worcestershire
- thyme, bay leaf if I remember
35 minutes high, quick release. Sometimes I thicken with a cornstarch slurry at the end if I’m feeling extra.

My Lazy Vegetarian Chili Recipe for When I Can’t Deal With Meat
Cans of beans (whatever’s in the pantry), diced tomatoes, onion, chili powder, cumin, bit of cocoa powder because someone on TikTok said it makes it better and they’re right. 12–15 mins pressure. Done.
Toppings make it feel less lazy: cheese, sour cream, crushed tortilla chips. My husband always goes “is there chocolate in this again?” and then has thirds.
