ugh okay so I was just thinking about how these Instant Pot recipes are literally holding my family together right now. Like, it’s 2025 (wait no 2026? time flies man), and between the endless soccer games, my job not giving me a break, and the fact that grocery prices are still insane, these fast family meals in the Instant Pot are the only thing keeping us from eating cereal for dinner again. I swear I love cooking but some nights I just can’t.
I mean I tried the whole “meal planning” thing last month—printed out cute lists, bought all the stuff, felt like a Pinterest mom for like 12 hours. Then reality hit: one kid hates broccoli now (didn’t last week), the other decided he’s “allergic” to anything green (eye roll), and I ended up tossing half of it. So back to the Instant Pot. Chicken (thighs because they’re cheap and juicy), rice, broth from a carton, frozen peas/carrots mix because chopping fresh is extra effort, ranch seasoning packet or whatever’s in the pantry. 8-10 min high pressure, quick release when I’m impatient. Stir in cheese at the end for creaminess. Kids devour it. I once forgot the liquid and got the dreaded burn notice—smoke everywhere, alarm blaring, dog barking. Fun times.

Instant Pot Chili – Beans Sneak Attack
Brown ground turkey or beef in the pot (sauté button is genius), add cans of beans (I use kidney and pinto), diced tomatoes, chili powder, cumin, little broth or beer if I have it. 12 min pressure. Tastes like it cooked forever. Top with cheese, sour cream, those Fritos for crunch. My picky one eats it if I call it “taco soup” instead. Overdid the spice once—had everyone chugging milk. Oops.

Chuck roast (on sale at Kroger last week thank god), baby potatoes, carrots cut big so kids don’t complain, onion soup mix or beef stock + garlic. 65 min high pressure, natural release because I read somewhere it’s better for meat. Shreds so easy. Gravy is just thicken the juices with cornstarch. Husband says it’s better than my slow cooker version. I burned the onions first time sautéing—lesson learned, low heat.
