  • Heavy cream or half-and-half (coconut milk works too)
  • Spices: garam masala (2 big tsp), cumin, turmeric, little chili powder (I go hard and regret it half the time)
  • Salt, oil, cilantro if I remember

How I do it:

  1. Heat oil in my favorite skillet (the nonstick one that’s starting to flake but I refuse to replace)
  2. Onion in, medium heat till soft and golden-ish (don’t let it burn like I did Tuesday)
  3. Garlic ginger spices—stir quick 30 sec
  4. Chicken in, brown the outsides
  5. Tomatoes, cover, simmer like 15-20 min
  6. Cream at the end, taste, add more salt probably
