alright here we go again. easy vegetarian pasta recipes are literally the only reason im not ordering doordash six nights a week right now. im dead serious. im typing this from my couch in chicago, its grey and drizzly outside again (shocker for february), my blanket smells like yesterday’s popcorn, and there’s a faint burnt garlic whiff because i left the pan soaking too long last night. typical thursday.
back when i first tried cutting back on meat i thought id be stuck eating sad iceberg salads forever or spending $12 on impossible crumbles that taste like regret. then i remembered pasta exists and its like… oh yeah this is allowed to be good AND easy. its cheap as hell, it doesnt care if you overcook it a little, and when youre exhausted from work and the L train was delayed again it still feels like a small win.

Creamy tomato basil pasta (the one i make when my brain is off)
this is my default when i want cozy but dont want to use more than four brain cells.
- boil pasta (i usually grab whatever’s open—penne, rotini, doesnt matter)
- mince like way too much garlic (4–6 cloves because i have a problem) into olive oil, maybe some chili flakes if im feeling brave
- can of crushed tomatoes goes in, salt pepper, dried basil because fresh always dies on me before i use it
- little splash of cream or even oat milk when im out of everything else, let it bubble a sec
- toss drained pasta in, grate parm till it looks obscene

One-pot veggie pasta for when dishes = existential dread
i would rather starve than wash three pots. this recipe is my soulmate.
everything in one pot: dry pasta, broth, whatever chopped veggies are about to expire (zucchini, mushrooms, spinach handfuls, tomatoes), garlic, olive oil, salt. boil then simmer till its done, cheese at the end. thats it.
i threw in extra mushrooms once because they were slimy and about to be trash and it turned kinda creamy and rich by accident. felt like i hacked the system. 20–25 min tops. this one is close to what i do: RecipeTin Eats vegetable pasta.

spaghetti + olive oil + stupid amounts of garlic + red pepper flakes + parsley if i didnt forget to buy it. lately i add cherry tomatoes so they pop and get sweet. sometimes broccoli because adult.

Mushroom marsala pasta bake when i pretend to be domestic
this ones slightly more effort but still counts as easy vegetarian pasta in my book. brown mushrooms, splash of marsala (or broth when im cheap), cream it up, mix with cooked pasta, cheese on top, bake till golden and bubbly.
